  • 2 chicken breasts, cubed
  • 1 tbsp vegetable oil
  • 1 small onion, thinly sliced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 2 garlic cloves, minced
  • 1 tsp fresh ginger, grated
  • 12 red chilies, chopped (optional)
  • 1 tbsp tomato paste
  • 1 tbsp soy sauce
  • ½ cup chicken stock or water
  • 2 medium potatoes (for fries)
  • Salt to taste
  • Chopped parsley for garnish

Instructions

  1. Prepare the fries by cutting potatoes into thick sticks. Toss with oil and salt, then bake at 425°F (220°C) for about 25-30 minutes until golden.
  2. Rinse rice under cold water and cook according to package instructions.
  3. In a large skillet over medium-high heat, add vegetable oil. Once hot, add cubed chicken and sear until browned on all sides; remove and set aside.
  4. In the same skillet, sauté garlic and ginger for one minute before adding sliced onion and chilies; cook until onions are translucent.
  5. Stir in red and green bell peppers and cook until slightly tender.
  6. Add tomato paste, soy sauce, chicken stock or water; simmer for two minutes.
  7. Return chicken to skillet and stir to coat in the sauce; let cook for another 3 minutes.
  8. Serve over rice with crispy fries on the side.
