  • 3 jalapeños, seeded and chopped
  • 1 small red onion, finely chopped
  • 2 tablespoons ginger, grated
  • 1/2 cup brown sugar
  • 1/2 cup apple cider vinegar
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 tablespoon lime juice
  • 1 tablespoon olive oil

Instructions

  1. Dice the pineapple and chop the jalapeños, red onion, and ginger.
  2. Heat olive oil in a medium saucepan over medium heat.
  3. Sauté the onion and ginger until translucent (about 3–5 minutes).
  4. Add the pineapple, jalapeños, brown sugar, apple cider vinegar, cumin, salt, and pepper. Stir to combine.
  5. Simmer for about 20 minutes until thickened, stirring occasionally.
  6. Remove from heat; stir in lime juice.
  7. Cool before transferring to an airtight container; refrigerate for at least an hour.
