  • 1 cup sushi rice
  • 1 avocado, sliced
  • 1 small cucumber, julienned
  • ½ cup mayonnaise
  • 2 tablespoons sriracha sauce
  • 2 tablespoons olive oil
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 2 teaspoons sugar
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar (for rice)
  • ½ teaspoon salt
  • 1 tablespoon sesame seeds (optional, for garnish)
  • Fresh cilantro or green onions (optional, for garnish)

Instructions

  1. 1. Rinse the sushi rice under cold water until clear.
  2. 2. Cook the rice with water in a medium pot; bring to a boil, reduce heat, cover, and simmer for 15 minutes.
  3. 3. Mix rice vinegar and salt into the cooked rice; let sit covered for another 10 minutes.
  4. 4. In a skillet over medium-high heat, sauté the shrimp in olive oil for 2-3 minutes per side until opaque.
  5. 5. Combine soy sauce, remaining rice vinegar, sugar, and sriracha; pour over shrimp and cook for an additional minute.
  6. 6. Layer the bottom of individual serving glasses with compacted sushi rice followed by spicy shrimp, avocado slices, and cucumber.
  7. 7. Garnish with sesame seeds or herbs if desired.
