1 lb boneless, skinless chicken thighs
1 cup barbecue sauce
1 tablespoon honey
1 teaspoon garlic powder
1 teaspoon onion powder
1 tablespoon olive oil
1 cup uncooked jasmine rice
2 cups chicken broth
Salt and black pepper to taste
Green onions and sesame seeds for garnish
Instructions
In a medium bowl, combine barbecue sauce, honey, garlic powder, onion powder, salt, and black pepper. Mix well.
Marinate chicken thighs in the mixture for at least 30 minutes.
Heat olive oil in a large skillet over medium-high heat. Sear marinated chicken thighs for about 5 minutes per side until golden brown.
Pour half of the reserved marinade over the chicken, cover, and simmer on low heat for 15-20 minutes or until fully cooked (internal temperature should reach 165°F).
While chicken simmers, rinse jasmine rice under cold water until clear. Cook rice in a saucepan with chicken broth according to package instructions.
Let cooked chicken rest for 5 minutes before slicing into bite-sized pieces.
Fluff the rice with a fork and serve topped with sliced chicken along with remaining barbecue sauce. Garnish with green onions and sesame seeds.
