  • 2 tablespoons all-purpose flour
  • 2 tablespoons Worcestershire sauce
  • 4 cups beef stock
  • 2/3 cup red cooking wine
  • 4 large carrots (roughly chopped)
  • 3 medium Yukon gold potatoes (cut into cubes)
  • Fresh herbs (rosemary, thyme, bay leaf)
  • 1 tablespoon browning sauce (optional, for color)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 2 teaspoons kosher salt
  • 1 teaspoon freshly ground black pepper
  • 2 tablespoons vegetable oil
  • 2 stalks celery (chopped)
  • 1/4 cup finely chopped yellow onion
  • 8 cloves garlic (minced)
  • 2 tablespoons tomato paste
  • 2 tablespoons roast beef base paste (like Better than Bouillon)

Instructions

  1. 1. Season the beef with flour, Worcestershire sauce, garlic powder, onion powder, Italian seasoning, salt, and pepper until evenly coated.
  2. 2. Heat vegetable oil in a Dutch oven over medium-high heat. Sear the seasoned beef on all sides until golden brown. Remove and set aside.
  3. 3. In the same pot, sauté chopped celery, onion, and minced garlic until softened. Stir in tomato paste and beef base; simmer briefly.
  4. 4. Add seared beef back to the pot along with beef stock, red wine, and fresh herbs. Cover and cook on medium-low for about 2 hours.
  5. 5. After two hours, add potatoes and carrots; continue cooking for an additional 30 to 45 minutes until vegetables are tender.
  6. 6. Serve warm with your choice of rice or bread.
