  • 1 pound imitation crab meat
  • ½ cup Kewpie mayonnaise
  • 1 tablespoon Sriracha
  • ¼ cup rice vinegar
  • 2 tablespoons soy sauce
  • Toppings: sliced cucumber, avocado, furikake

Instructions

  1. Rinse the sushi rice until clear and cook according to instructions.
  2. In a bowl, mix rice vinegar, sugar, and salt; combine with warm rice.
  3. In another bowl, blend imitation crab with Kewpie mayo, Sriracha, sake, soy sauce, and sugar until even.
  4. Preheat oven to 350°F (175°C). Layer half the rice in a greased baking dish followed by half the crab mixture; repeat layers.
  5. Bake for 15 minutes until heated through. Serve topped with cucumber, avocado, furikake.
