Ingredients

Scale
  • 2 medium English cucumbers

  • 4 oz whipped cream cheese
  • 2 tbsp mayonnaise
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 1 cup imitation crab, smoked salmon, canned tuna, or shrimp

Instructions

  1. Prepare the cucumbers by slicing them lengthwise and scooping out seeds if necessary. Cut into bite-sized pieces.
  2. Thinly slice the onion; soak in cold water briefly if using red onion to reduce sharpness.
  3. In a mixing bowl, combine whipped cream cheese, mayonnaise, soy sauce, rice vinegar, and sesame oil. Whisk until smooth.
  4. Add cucumbers and onions to the dressing and gently fold in your choice of protein.
  5. Serve chilled; top with furikake or spicy mayo for an extra kick.
