  • 500 g boneless skinless chicken breast, diced
  • 6 tablespoons cornstarch
  • 50 ml vegetable oil
  • 1 onion, thinly sliced
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 6 tablespoons ketchup
  • 2 tablespoons cider vinegar
  • 6 tablespoons demerara sugar
  • 1 tablespoon soy sauce
  • 1 tablespoon fresh ginger, grated
  • 2 cloves garlic, grated
  • 432 g tin pineapple pieces (drained)

Instructions

  1. Prepare chicken by dicing it into uniform cubes and coating with cornstarch.
  2. Heat vegetable oil in a large skillet over medium-high heat and fry chicken until golden brown (about 4-5 minutes per side). Remove and set aside.
  3. In the same skillet, sauté onion until translucent, then add red and yellow bell peppers; cook until tender.
  4. In a bowl, mix together ketchup, cider vinegar, sugar, soy sauce, ginger, and garlic; pour into the skillet with vegetables.
  5. Add drained pineapple pieces to the sauce and simmer for about 5 minutes until thickened.
  6. Return chicken to the skillet; toss to coat in the sauce.
