  • 1 lb boneless skinless chicken breast or thighs, cut into bite-sized pieces
  • 1/2 cup cornstarch
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp vegetable oil
  • 1/4 cup ketchup
  • 1/4 cup rice vinegar
  • 1/4 cup low-sodium soy sauce
  • 1/3 cup sugar
  • 2 tbsp pineapple juice
  • 1 tbsp cornstarch mixed with 2 tbsp water (for thickening)
  • 1 cup pineapple chunks (fresh or canned)
  • 1 medium red bell pepper, diced
  • 1 medium green bell pepper, diced
  • 1/2 medium onion, sliced (optional)

Instructions

  1. Prepare your ingredients by cutting the chicken into bite-sized pieces and measuring out your sauces.
  2. In a large bowl, toss the chicken pieces with cornstarch, salt, and black pepper until well coated.
  3. Heat vegetable oil in a large skillet over medium-high heat. Add half of the coated chicken pieces to the pan in one layer and fry until golden brown (about 5 minutes). Remove and set aside on paper towels.
  4. Lower the heat to medium-low and add ketchup, rice vinegar, soy sauce, sugar, and pineapple juice to the same pan; stir well.
  5. Bring the sauce to a gentle simmer for about 3-4 minutes until slightly thickened. Add the cornstarch-water mixture to thicken further.
  6. Fold in the fried chicken pieces, pineapple chunks, diced bell peppers, and onion (if using). Simmer for another 2-3 minutes until heated through.
  7. Serve hot over rice or quinoa.
