  • 1 lb lean ground beef (90% lean recommended)
  • 1 packet taco seasoning
  • 0.5 cup diced yellow onion
  • 2 cloves garlic (minced)
  • 1 cup long-grain white rice (rinsed)
  • 2 cups water or chicken broth
  • 0.5 cup fresh cilantro (finely chopped)
  • Juice of 1 lime
  • Toppings: shredded lettuce, diced tomatoes, shredded cheese, sour cream, salsa, avocado

Instructions

  1. In a medium saucepan over high heat, bring 2 cups of water or chicken broth to a boil. Rinse the rice under cold water until it runs clear, then add it to the boiling liquid. Reduce heat to low and cover tightly. Simmer for 15–18 minutes until cooked.
  2. In a large skillet over medium-high heat, add the ground beef and diced onions. Cook for about 5–7 minutes until the beef is browned and onions are translucent.
  3. Add minced garlic and taco seasoning to the skillet; stir in 0.33 cup of water or broth. Simmer for an additional 2–3 minutes until flavors meld.
  4. Assemble your bowl by placing a scoop of rice at the bottom, followed by the seasoned beef mixture.
  5. Top with shredded lettuce, diced tomatoes, cheese, sour cream, salsa, avocado, and cilantro.
  6. Allow the assembled bowl to rest for a couple of minutes before serving.
