  • 3 cups shredded cooked chicken
  • 6 ounces cream cheese (softened)
  • 1½ cups baby spinach (chopped)
  • 1½ cups shredded Colby Jack cheese (or Mexican blend)
  • ½ cup salsa
  • ⅓ cup sour cream
  • Salt and pepper to taste
  • 12 (6-inch) corn or flour tortillas

Instructions

  1. Heat about half an inch of oil in a saucepan over medium heat until it reaches 350 degrees F.
  2. In a large bowl, combine the shredded chicken, softened cream cheese, chopped spinach, shredded cheese, salsa, sour cream, salt, and pepper. Mix until well blended.
  3. Take each tortilla and fill it with a few tablespoons of the chicken mixture. Roll tightly seam-side down.
  4. Carefully fry the taquitos in batches until golden brown on both sides (about 2-3 minutes per side). Drain on paper towels.
