  • 3 cups cooked brown rice
  • 32 oz frozen mixed vegetables (Asian varieties)
  • 1 cup pineapple tidbits (drained)
  • Homemade teriyaki sauce (prepared with soy sauce, brown sugar, honey, ginger, olive oil, and garlic)

Instructions

  1. Preheat oven to 350°F (175°C). In a saucepan, combine soy sauce, water, brown sugar, honey, ginger, olive oil, and garlic; bring to a boil.
  2. Mix cornstarch with water to create a slurry; add to boiling sauce until thickened. Set aside.
  3. Place chicken in a casserole dish; pour 1 cup of teriyaki sauce over it. Bake for 30-35 minutes until cooked through (165°F).
  4. Shred chicken in the dish; add cooked rice, vegetables, pineapple tidbits, and remaining teriyaki sauce. Gently stir to combine.
  5. Bake for an additional 15 minutes until heated through.
