  • 2 lbs chicken thighs or breasts, cut into 1" cubes
  • 2 tbsp cornstarch
  • 1 cup water
  • 1/3 cup brown sugar
  • 1/3 cup low-sodium soy sauce
  • 2 cloves garlic, minced
  • 1 tbsp rice vinegar
  • 1/2 tbsp fresh ginger, minced
  • 1 tbsp honey (or agave syrup)
  • 1/2 tsp sesame oil (optional)
  • 8 skewers (metal or soaked wooden)
  • Sesame seeds and chopped green onion for garnish

Instructions

  1. In a medium saucepan, combine cornstarch and water until smooth. Add brown sugar, soy sauce, garlic, rice vinegar, ginger, honey, and sesame oil. Heat over medium until bubbling and thickened. Allow to cool.
  2. In a large ziplock bag, marinate chicken cubes with half of the cooled teriyaki sauce for at least 30 minutes in the refrigerator.
  3. Preheat grill to medium heat. Thread marinated chicken onto skewers.
  4. Grill skewers for about 10–12 minutes, turning every 3–4 minutes until the internal temperature reaches 165°F.
  5. Brush remaining teriyaki sauce on skewers during the last few minutes of grilling.
  6. Let rest for 5–10 minutes before serving with garnishes.
