  • 3 cups broccoli florets
  • ¾ cup chicken broth
  • ¼ cup soy sauce (low-sodium)
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 2 tablespoons cornstarch
  • Peanut oil (or olive oil)
  • 3 cloves garlic (minced)
  • ½ teaspoon ground ginger
  • Green onions (for garnish)
  • Toasted sesame seeds (for garnish)

Instructions

  1. In a mixing bowl, combine chicken broth and cornstarch until smooth. Add soy sauce, honey, rice vinegar, garlic, ginger, and mix well.
  2. Cut chicken into uniform cubes and season with salt and pepper.
  3. Heat peanut oil in a large skillet over medium-high heat. Add chicken and cook for about 4 minutes until golden brown.
  4. Toss in broccoli florets and stir-fry until tender-crisp.
  5. Pour the prepared teriyaki sauce into the skillet. Bring to a gentle boil while stirring to thicken the sauce (about 1 minute).
