  • 1 tbsp fresh lime juice
  • 0.5 cup mayonnaise (or vegan mayo)
  • 1 tbsp sriracha (or smooth hot sauce)
  • 1 large avocado (sliced)
  • Black sesame seeds (for garnish)

Instructions

  1. Rinse the rice under cold water until it runs clear. Combine rinsed rice and water in a medium saucepan, bring to a boil, reduce heat to low, cover, and simmer for 15 minutes. Remove from heat and let sit covered for an additional 10 minutes before fluffing with a fork.
  2. In a bowl, combine shrimp with olive oil, chili powder, smoked paprika, cumin, and salt. Let marinate for at least 15 minutes.
  3. Heat a skillet over medium-high heat; sear the shrimp for about 2-3 minutes on each side until cooked through.
  4. In another bowl, mix together mango, purple onion, jalapeño, cilantro, and lime juice to create the salsa.
  5. Assemble the bowls by placing rice at the bottom, topping with shrimp, mango salsa, avocado slices, and drizzling with lime-chili sauce made from mixing mayonnaise with sriracha and lime juice.
