  • 20 oz refrigerated or fresh cheese tortellini
  • 6 slices turkey bacon, chopped
  • 4 large egg yolks
  • 1 large whole egg
  • 1 cup freshly grated Parmesan cheese
  • 3 cloves garlic, minced
  • 1/2 cup reserved pasta water
  • 1 teaspoon freshly cracked black pepper
  • 1/2 teaspoon salt
  • 2 tablespoons fresh parsley, chopped (optional)

Instructions

  1. Bring a large pot of salted water to a boil.
  2. In a skillet over medium heat, cook the chopped turkey bacon until crispy. Remove and set aside.
  3. Add minced garlic to the skillet and sauté until fragrant.
  4. In a mixing bowl, whisk together egg yolks, whole egg, grated Parmesan, black pepper, and salt.
  5. Cook the tortellini in boiling water until they float (about 3–5 minutes). Reserve half a cup of pasta water before draining.
  6. Toss drained tortellini in the skillet with garlic fat, then add the egg mixture while tossing continuously to create a creamy sauce.
  7. Fold in crispy turkey bacon and adjust consistency with reserved pasta water if needed.
  8. Serve immediately garnished with extra Parmesan and parsley.
