  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 1 medium carrot, diced
  • 23 celery stalks, diced
  • 2 large garlic cloves, minced
  • 1 tablespoon Italian seasoning mix
  • 1/4 teaspoon red chili flakes
  • 2 tablespoons tomato paste
  • 1.5 cups tomato sauce
  • 5 cups chicken stock
  • 3/4 cup orzo pasta
  • 2 cups baby spinach
  • 1/2 cup half-and-half
  • Grated Parmesan cheese

Instructions

  1. Heat olive oil in a large stock pot over medium heat. Sauté onion, carrot, and celery for about 7–8 minutes until softened.
  2. Add minced garlic, Italian seasoning, and red chili flakes; cook for an additional minute.
  3. Stir in tomato paste and sauce, then pour in chicken stock along with orzo. Bring to a boil.
  4. Lower heat and let it simmer for about 10 minutes, stirring occasionally.
  5. Incorporate turkey meatballs and spinach; cover and simmer for another 1–2 minutes until the spinach wilts.
  6. Stir in half-and-half and grated Parmesan; season with salt and pepper before serving.
