  • 1 medium yellow onion (chopped)
  • 3 ribs celery (chopped)
  • 3 carrots (sliced)
  • 4 cloves garlic (minced)
  • ¾ cup pearl barley (rinsed)
  • 6 cups low sodium vegetable broth
  • 15 oz can petite diced tomatoes
  • ½ pound Yukon gold potatoes (chopped)
  • ¾ cup frozen green beans
  • Italian seasoning
  • dried thyme
  • salt
  • black pepper
  • bay leaf

Instructions

  1. Heat olive oil in a Dutch oven over medium heat. Add onion, celery, and carrots; sauté until softened (about 5 minutes).
  2. Stir in minced garlic and cook for an additional 30 seconds.
  3. Mix in rinsed barley, Italian seasoning, thyme, salt, and pepper.
  4. Pour in vegetable broth, diced tomatoes, and add bay leaf; stir to combine.
  5. Bring the mixture to a simmer, cover, and cook for about 25 minutes.
  6. Add chopped potatoes and continue simmering for another 20–35 minutes until barley is tender.
  7. In the last 5 minutes of cooking, stir in frozen green beans.
  8. Remove the bay leaf before serving.
