  • 250 grams ripe mixed cherry tomatoes
  • 2 cloves of garlic, finely sliced
  • 3–4 small sprigs of thyme
  • 5 tablespoons Babylonstoren Extra Virgin Coratina Olive Oil (divided)
  • 1 tablespoon balsamic vinegar (optional)
  • 200 grams crumbly feta cheese
  • ¼ cup + 2 tablespoons full-fat cream cheese
  • Zest from ½ a lemon
  • A drizzle of honey
  • A small handful of fresh basil leaves or shredded larger basil
  • Griddle fried ciabatta with olive oil
  • Salt & Pepper

Instructions

  1. Preheat oven to 180C/350F.
  2. In a baking dish, combine cherry tomatoes, sliced garlic, thyme, and drizzle with 3 tablespoons of olive oil. Season with salt and pepper.
  3. Roast for about 30 minutes until the tomatoes are blistered.
  4. In a food processor, blend feta cheese, cream cheese, lemon zest, and remaining olive oil until smooth.
  5. Spread whipped feta on a serving plate and top with roasted tomatoes and any residual oil.
  6. Garnish with fresh basil leaves and serve.
