  • 1/2 pound ground chicken
  • 1 tablespoon unseasoned rice vinegar
  • 1 tablespoon soy sauce
  • 1 teaspoon toasted sesame oil
  • 1 teaspoon garlic (grated)
  • 1 teaspoon fresh ginger (grated)
  • 1 teaspoon light brown sugar
  • 2 green onions (finely chopped)
  • 24 wonton wrappers (square-shaped and inches on each side)
  • 6 cups low-sodium chicken broth
  • 3 garlic cloves minced
  • 2 1/2 tablespoons dark soy sauce
  • 1 teaspoon sesame oil
  • 23 finely chopped green onions
  • 3 baby bok choy (cut lengthwise)

Instructions

  1. In a large mixing bowl, combine ground chicken, rice vinegar, soy sauce, toasted sesame oil, grated garlic, grated ginger, light brown sugar, and finely chopped green onions. Mix until well combined.
  2. Take one wonton wrapper and place about one teaspoon of filling in the center. Moisten the edges of the wrapper with water. Fold the wrapper over to create a triangle shape. Press to seal tightly. Bring the two corners of the triangle towards each other to form a pouch shape. Seal again with a bit of water if needed. Repeat until all filling is used.
  3. In a large pot over medium heat, add low-sodium chicken broth along with minced garlic, dark soy sauce, and sesame oil. Bring to a gentle simmer.
  4. Carefully add the assembled wontons to the simmering broth. Cook for about 5–7 minutes or until they float to the top.
  5. Stir in finely chopped green onions and cut baby bok choy. Allow everything to cook together for an additional 2–3 minutes until bok choy is tender.
