Method
Cook the Chicken
- Heat olive oil in a large skillet over medium heat. Add chicken pieces and season with salt and pepper. Cook until browned and cooked through, about 5-7 minutes.
- Remove chicken from the skillet and set aside.
Prepare the Sauce
- In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant.
- Pour in chicken broth and heavy cream, stirring to combine. Bring to a simmer.
- Add Italian seasoning and spinach, cooking until spinach is wilted, about 2-3 minutes.
Cook the Gnocchi
- Add gnocchi to the skillet and cook according to package instructions, usually about 2-3 minutes until they float.
- Return the cooked chicken to the skillet and stir to combine everything.
Serve
- Serve hot, garnished with grated parmesan cheese and chopped parsley.
