Ingredients
  

Meatballs
  • 1 lb ground chicken
  • 1 cup ricotta cheese
  • 1/2 cup breadcrumbs
  • 1 large egg
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup fresh parsley chopped
Spinach Alfredo Sauce
  • 2 tbsp butter
  • 2 cloves garlic minced
  • 1 cup heavy cream
  • 1 cup fresh spinach chopped
  • 1/2 cup parmesan cheese grated
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Method
 

Prepare Meatballs
  1. Preheat the oven to 400°F (200°C).
  2. In a mixing bowl, combine ground chicken, ricotta cheese, breadcrumbs, egg, garlic powder, onion powder, salt, black pepper, and parsley. Mix until well combined.
  3. Form the mixture into meatballs, about 1.5 inches in diameter, and place them on a baking sheet.
  4. Bake in the preheated oven for 25-30 minutes, or until cooked through and golden brown.
Make Spinach Alfredo Sauce
  1. In a saucepan, melt butter over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  2. Pour in the heavy cream and bring to a simmer. Cook for 2-3 minutes, stirring frequently.
  3. Add chopped spinach, parmesan cheese, salt, and pepper. Stir until the spinach is wilted and the cheese is melted.
Serve
  1. Once the meatballs are done, remove them from the oven and serve with the spinach Alfredo sauce poured over the top.
  2. Garnish with additional parmesan cheese and parsley if desired.

Notes

For a lighter version, you can substitute ground turkey for ground chicken.
