Ingredients
  

Potatoes and Feta
  • 2 pounds baby potatoes halved
  • 8 ounces feta cheese block
  • 1 lemon zest and juice
  • 3 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
Garnish
  • 2 tablespoons fresh parsley chopped

Method
 

Prepare the Potatoes
  1. Preheat the oven to 400°F (200°C).
  2. In a mixing bowl, combine the halved baby potatoes, olive oil, oregano, salt, and black pepper. Toss to coat evenly.
Assemble the Dish
  1. Spread the seasoned potatoes in a single layer in a baking dish.
  2. Place the block of feta cheese in the center of the potatoes.
  3. Drizzle the lemon juice and sprinkle the lemon zest over the feta and potatoes.
Bake
  1. Bake in the preheated oven for 35-40 minutes, or until the potatoes are tender and the feta is golden.
Serve
  1. Remove from the oven and garnish with chopped fresh parsley before serving.
