  • 2 pounds boneless, skinless chicken breasts Cut into 1-inch cubes.
  • 1 tablespoon vegetable oil Used for sautéing the chicken.
  • 1 teaspoon paprika Provides color and mild smoky flavor.
  • 1 teaspoon garlic powder Adds depth to the taste.
  • 1 teaspoon kosher salt Essential for seasoning.
  • ½ teaspoon black pepper For a subtle hint of heat.
  • 4 cups prepared white rice Base for the toppings.
  • 2 cups red cabbage Thinly sliced for crunch.
  • 1 large carrot Julienned for sweetness.
  • 1 medium cucumber Halved and sliced for freshness.
  • 1 large avocado Thinly sliced for creaminess.

Method
 

  1. Prepare the Sauce: In a bowl, mix together mayonnaise, Thai sweet chili sauce, honey, and Sriracha until well combined. Adjust Sriracha according to your desired spice level.
  2. Cook the Chicken: Heat vegetable oil in a large skillet over medium-high heat. Season chicken cubes with paprika, garlic powder, kosher salt, and black pepper before adding them to the skillet.
  3. Sauté the Chicken: Cook the chicken in the skillet for about 6-8 minutes or until golden brown and cooked through, stirring occasionally.
  4. Combine with Sauce: Once cooked, remove the skillet from heat and toss the chicken with the prepared Bang Bang sauce until evenly coated.
  5. Assemble Your Bowls: Divide warm rice among four bowls, then top each bowl with sautéed chicken along with red cabbage, carrot, cucumber, avocado slices, cilantro, and sesame seeds.
