Ingredients
  

For the BBQ Salmon
  • 4 fillets salmon skin-on preferred
  • 2 tablespoons BBQ sauce your favorite brand
  • 1 teaspoon olive oil for grilling
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
For the Mango Avocado Salsa
  • 1 cup mango diced
  • 1 medium avocado diced
  • 1/4 cup red onion finely chopped
  • 1 medium lime juiced
  • 1/4 cup cilantro chopped
  • 1/2 teaspoon salt to taste
For Serving
  • 2 cups cooked rice white or brown
  • 1 cup mixed greens optional

Method
 

Prepare the Salmon
  1. Preheat the grill to medium-high heat.
  2. Brush the salmon fillets with olive oil and season with salt and pepper.
  3. Grill the salmon for about 5-7 minutes per side, brushing with BBQ sauce during the last few minutes of cooking.
Make the Salsa
  1. In a mixing bowl, combine diced mango, avocado, red onion, lime juice, cilantro, and salt.
  2. Gently toss to combine and set aside.
Assemble the Bowls
  1. In each bowl, add a serving of cooked rice and mixed greens if using.
  2. Top with grilled salmon and a generous scoop of mango avocado salsa.
  3. Serve immediately and enjoy!
