Ingredients
  

Chicken and Rice Mixture
  • 2 cups cooked chicken shredded or diced
  • 1 cup long-grain white rice uncooked
  • 2 cups chicken broth low sodium
  • 1 cup cream of chicken soup can or homemade
  • 1 cup frozen mixed vegetables peas, carrots, corn
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
  • 1 cup shredded cheddar cheese for topping

Method
 

Prepare the Casserole
  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine the cooked chicken, uncooked rice, chicken broth, cream of chicken soup, frozen mixed vegetables, garlic powder, onion powder, salt, and black pepper. Mix well.
  3. Pour the mixture into a greased 9x13 inch baking dish, spreading it evenly.
  4. Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes.
  5. Remove the foil, sprinkle the shredded cheddar cheese on top, and bake uncovered for an additional 15 minutes, or until the cheese is melted and bubbly.

Notes
