Prepare the Casserole
- Preheat the oven to 350°F (175°C).
- In a large mixing bowl, combine the cooked chicken, uncooked rice, chicken broth, cream of chicken soup, frozen mixed vegetables, garlic powder, onion powder, salt, and black pepper. Mix well.
- Pour the mixture into a greased 9x13 inch baking dish, spreading it evenly.
- Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes.
- Remove the foil, sprinkle the shredded cheddar cheese on top, and bake uncovered for an additional 15 minutes, or until the cheese is melted and bubbly.

Notes
For added flavor, you can sauté some onions and garlic before adding them to the mixture. This casserole can be made ahead of time and stored in the refrigerator before baking.
