Ingredients
  

Chicken and Broth
  • 1 lb boneless, skinless chicken breasts cut into bite-sized pieces
  • 6 cups chicken broth low sodium preferred
  • 1 cup water
Vegetables
  • 1 cup carrots sliced
  • 1 cup celery sliced
  • 1 cup onion diced
  • 2 cloves garlic minced
Noodles and Seasoning
  • 8 oz egg noodles uncooked
  • 1 tsp dried thyme
  • 1 tsp dried parsley
  • 1 tsp salt to taste
  • 1/2 tsp black pepper to taste

Method
 

Prepare the Chicken and Broth
  1. In a large pot, combine the chicken broth and water. Bring to a boil.
  2. Add the chicken pieces and cook for about 10 minutes until no longer pink.
Add Vegetables
  1. Stir in the carrots, celery, onion, and garlic. Cook for an additional 10 minutes.
Cook the Noodles
  1. Add the egg noodles, thyme, parsley, salt, and pepper to the pot. Cook for another 10 minutes until noodles are tender.
Serve
  1. Ladle the soup into bowls and serve hot.
