Ingredients
  

  • 1.5 cups all-purpose flour
  • 0.75 cups granulated sugar
  • 1 tbsp baking powder
  • 0.25 tsp salt
  • 0.33 cups whole milk
  • 0.33 cups vegetable oil
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cups fresh blackberries

Method
 

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  3. In another bowl, combine milk, vegetable oil, egg, and vanilla extract; whisk until smooth.
  4. Gently pour wet ingredients into dry ingredients and stir until just combined. Do not overmix.
  5. Carefully fold in blackberries.
  6. Divide the batter evenly among muffin cups and bake for 20-25 minutes or until golden brown and a toothpick comes out clean.
  7. Cool in the pan for about 5 minutes before transferring to a wire rack.
