- In a large bowl, whisk together flour, sugar, baking powder, and salt.
- In another bowl, combine milk, vegetable oil, egg, and vanilla extract; whisk until smooth.
- Gently pour wet ingredients into dry ingredients and stir until just combined. Do not overmix.
- Carefully fold in blackberries.
- Divide the batter evenly among muffin cups and bake for 20-25 minutes or until golden brown and a toothpick comes out clean.
- Cool in the pan for about 5 minutes before transferring to a wire rack.
