Ingredients
  

Salad Base
  • 2 cups fresh spinach washed and dried
  • 1 cup blueberries fresh or frozen
  • 2 medium peaches sliced
  • 1/2 cup feta cheese crumbled
Dressing
  • 3 tablespoons olive oil extra virgin
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon honey optional
  • 1/4 teaspoon salt to taste
  • 1/4 teaspoon black pepper to taste

Method
 

Prepare the Salad
  1. In a large mixing bowl, combine the spinach, blueberries, sliced peaches, and crumbled feta cheese.
  2. Toss gently to combine all ingredients.
Make the Dressing
