Ingredients
  

  • 1 package frozen puff pastry sheets, thawed 17.3 oz
  • 2 cups fresh blueberries (or frozen, thawed)
  • 1/4 cup granulated sugar
  • 1 tbsp cornstarch
  • 1 tsp ground cinnamon
  • 1 tsp vanilla extract
  • 1/4 cup whole milk for icing
  • 1 cup powdered sugar

Method
 

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Roll out thawed puff pastry on a floured surface and cut into rectangles (4x6 inches).
  3. In a bowl, mix blueberries, sugar, cornstarch, cinnamon, and vanilla until evenly coated.
  4. Spoon filling onto one side of each pastry rectangle; fold over and seal edges with a fork.
  5. Bake for 15-20 minutes until golden brown and puffed.
  6. While baking, whisk together powdered sugar and milk for icing. Adjust consistency as needed.
  7. Allow strudels to cool slightly before drizzling with icing.
