- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Roll out thawed puff pastry on a floured surface and cut into rectangles (4x6 inches).
- In a bowl, mix blueberries, sugar, cornstarch, cinnamon, and vanilla until evenly coated.
- Spoon filling onto one side of each pastry rectangle; fold over and seal edges with a fork.
- Bake for 15-20 minutes until golden brown and puffed.
- While baking, whisk together powdered sugar and milk for icing. Adjust consistency as needed.
- Allow strudels to cool slightly before drizzling with icing.
