Ingredients
  

  • 1.5 lbs boneless, skinless chicken breasts
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1/2 cup bourbon whiskey
  • 1/3 cup low-sodium soy sauce
  • 1/4 cup brown sugar
  • 2 tablespoons cornstarch
  • 2 tablespoons vegetable oil
  • 1/4 cup water
  • 2 stalks green onions, sliced for garnish

Method
 

  1. Dice the chicken into bite-sized pieces. Mince the garlic and grate the ginger.
  2. In a bowl, mix together bourbon, soy sauce, brown sugar, minced garlic, and grated ginger. Add the diced chicken and marinate for at least 30 minutes.
  3. Heat vegetable oil in a skillet over medium-high heat. Sauté the marinated chicken until it’s golden brown and cooked through.
  4. Remove the chicken from the skillet but keep the drippings. Pour in the remaining marinade mixed with cornstarch and water to thicken the sauce.
  5. Return the chicken to the skillet once the sauce has thickened, stirring to coat the chicken.
  6. Serve the Bourbon Chicken over rice or noodles, garnished with sliced green onions.
