  • 1 lb ground beef preferably 80/20 for flavor
  • 1 medium head of cabbage chopped
  • 1 cup onion diced
  • 2 cloves garlic minced
  • 1 can diced tomatoes 14.5 oz, undrained
  • 1 cup beef broth low sodium
  • 1 tbsp olive oil for cooking
  • 1 tbsp Italian seasoning
  • 1 tsp salt to taste
  • 1 tsp black pepper to taste

Method
 

Cooking the Beef
  1. Heat olive oil in a large skillet over medium heat.
  2. Add the diced onion and minced garlic, sauté until the onion is translucent, about 3-4 minutes.
  3. Add the ground beef to the skillet, breaking it up with a spatula, and cook until browned, about 5-7 minutes.
Adding Cabbage and Tomatoes
  1. Stir in the chopped cabbage, diced tomatoes, beef broth, Italian seasoning, salt, and pepper.
  2. Bring the mixture to a simmer, cover, and cook for about 15-20 minutes, stirring occasionally, until the cabbage is tender.
Final Touches
  1. Taste and adjust seasoning if necessary.
  2. Serve hot, garnished with fresh herbs if desired.
