Ingredients
  

  • 3 pieces lemons Choose fresh, firm lemons for the best flavor.
  • 2 cups granulated sugar This will create the syrup needed for candying the lemons.
  • 1.5 cups water Essential for dissolving the sugar and simmering the lemon slices.
  • 0.25 cups sugar For coating, adds an extra sweetness to the finished product.
  • 10 pieces melting chocolate Optional, provides a rich and decadent finish if desired.

Method
 

  1. Slice lemons thinly (1/4-1/8 inch) and remove any seeds.
  2. Heat water and 2 cups of sugar in a large saucepan or skillet over medium heat until sugar is dissolved and mixture begins to simmer.
  3. Add lemon slices to the syrup and simmer on low or medium-low heat for 1 hour, flipping every 15 minutes.
  4. Remove lemon slices from syrup and lay them on parchment paper. Let them sit out for one day (24 hours) to dry.
  5. Coat the dried lemon slices with the remaining 1/4 cup of sugar.
  6. Melt some chocolate and dip the sugar-coated lemon slices in it if desired.
