Preparation
- Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
- In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking soda, cinnamon, nutmeg, and salt until well combined.
- Add in the eggs and vegetable oil; stir gently until just combined—avoid overmixing.
- Fold in the grated carrots and nuts if using; ensure the batter is thick but not dry.
- Pour the batter into the prepared loaf pan and bake for 50-60 minutes or until a toothpick inserted comes out clean.
- Allow the loaf to cool for 10 minutes in the pan before transferring to a wire rack.
- Once completely cooled, prepare the cream cheese frosting by whipping together the cream cheese and powdered sugar until smooth. Frost generously on top of the loaf.
