Ingredients

Pasta
  • 12 oz spaghetti or any pasta of choice
Sauce
  • 4 oz cream cheese softened
  • 1 cup heavy cream
  • 1 cup Parmesan cheese grated
  • 4 cloves garlic minced
  • 2 tbsp olive oil
  • 1 tsp salt to taste
  • 1/2 tsp black pepper to taste
  • 1/4 cup fresh parsley chopped, for garnish

Method

Cook the Pasta
  1. Bring a large pot of salted water to a boil. Add spaghetti and cook according to package instructions until al dente.
  2. Drain the pasta in a colander and set aside, reserving 1/2 cup of pasta water.
Prepare the Sauce
  1. In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
  2. Reduce heat to low, then add cream cheese and heavy cream. Stir until smooth and combined.
  3. Gradually add grated Parmesan cheese, stirring until melted and creamy. Season with salt and black pepper.
Combine and Serve
  1. Add the cooked spaghetti to the sauce, tossing to coat. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.
  2. Serve immediately, garnished with chopped parsley and additional Parmesan if desired.
