Method
Cook the Pasta
- Bring a large pot of salted water to a boil. Add spaghetti and cook according to package instructions until al dente.
- Drain the pasta in a colander and set aside, reserving 1/2 cup of pasta water.
Prepare the Sauce
- In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
- Reduce heat to low, then add cream cheese and heavy cream. Stir until smooth and combined.
- Gradually add grated Parmesan cheese, stirring until melted and creamy. Season with salt and black pepper.
Combine and Serve
- Add the cooked spaghetti to the sauce, tossing to coat. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.
- Serve immediately, garnished with chopped parsley and additional Parmesan if desired.
