  • 3 cups boneless, skinless chicken breasts diced
  • 2 cups fresh corn off the cob
  • 1 medium onion chopped
  • 4 cloves garlic minced
  • 2 medium Yukon gold potatoes diced
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1 tsp fresh thyme
  • Salt to taste
  • Pepper to taste

Method
 

  1. Prepare your ingredients: Chop the onion, dice the potatoes, and mince the garlic.
