Ingredients
  

Chicken
  • 1.5 pounds boneless, skinless chicken breasts
Vegetables
  • 2 cloves fresh garlic, minced
  • 2 medium carrots, diced
  • 2 stalks celery, diced
Broth
  • 4 cups chicken broth
Dumpling Batter
  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1 cup milk
  • 4 tbsp unsalted butter, melted
  • 1 tsp dried thyme (or fresh)
  • 1 tbsp fresh parsley, chopped
  • Salt and pepper to taste

Method
 

Cooking Instructions
  1. Chop chicken breasts into bite-sized pieces and season with salt and pepper.
  2. In a large pot over medium heat, add olive oil and sauté garlic, carrots, and celery until tender (about 5 minutes).
  3. Pour in the chicken broth and bring to a gentle boil; then add the seasoned chicken pieces.
  4. In a mixing bowl, combine flour, baking powder, milk, melted butter, salt, and pepper to create a thick batter.
  5. Once the broth is boiling gently again, drop spoonfuls of the dumpling batter into the pot. Cover tightly with a lid and steam for about 15 minutes until fluffy.
  6. Garnish with fresh thyme and parsley just before serving.
