Cooking Instructions
- Prep all ingredients by washing and chopping vegetables.
- In a large pot, heat olive oil over medium-high heat. Sear the chicken breasts for about 4-5 minutes on each side until golden brown. Remove from pot and set aside.
- Add onions, garlic, tomatillos, and jalapeños to the pot. Cook for about 3-4 minutes until onions are translucent.
- Stir in cumin and oregano; add chicken broth to cover the mixture.
- Bring to a gentle boil, reduce heat to low, cover, and simmer for 30-35 minutes until the chicken is cooked through.
- Shred the chicken using two forks and return it to the pot with chopped cilantro and lime juice just before serving.
