Ingredients
  

  • 3 cups boneless, skinless chicken breasts diced
  • 4 cups sturdy tortilla chips
  • 2 cups shredded cheddar cheese
  • 1 can (15 oz) black beans rinsed
  • 2 fresh jalapeños sliced
  • 1 cup sour cream
  • 1/2 cup green onions chopped
  • 1 cup pico de gallo
  • 2 tsp olive oil
  • 2 tsp cumin
  • 2 tsp chili powder

Method
 

  1. Preheat oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Sauté diced chicken until golden brown and cooked through.
  3. Stir in cumin and chili powder until chicken is evenly coated.
  4. In a baking dish, layer tortilla chips, the spiced chicken mixture, black beans, and half of the shredded cheese.
  5. Bake for about 15 minutes until cheese is bubbly.
  6. Remove from oven and top with jalapeños, green onions, sour cream, and pico de gallo.
  7. Serve hot and enjoy!
