  • 3-4 pieces boneless, skinless chicken breasts about 1.5 lbs
  • 4 cloves fresh garlic minced
  • 3 pieces dried ancho or guajillo red chile peppers
  • 6 cups low-sodium chicken broth
  • 2 cups shredded cabbage
  • 2 pieces limes cut into wedges
  • 1 piece avocado sliced
  • 4 pieces radishes thinly sliced

Method
 

  1. Prepare your ingredients by chopping the onions and mincing the garlic.
  2. In a large pot over medium heat, cook chicken breasts covered with water or broth for about 20-25 minutes until fully cooked.
  3. Remove chicken from the pot and shred using two forks.
  4. In the same pot, sauté chopped onions and minced garlic in oil until translucent (about 5 minutes).
  5. Add chopped chiles and chicken broth; bring to a simmer.
  6. Return shredded chicken to the pot and simmer for another 15-20 minutes.
  7. Serve hot with toppings like cabbage, radishes, avocado slices, and lime juice.
