Ingredients
  

Chicken
  • 4 pieces boneless, skinless chicken breasts pounded to 1/2 inch thickness
Breading
  • 1 cup all-purpose flour for dredging
  • 2 large eggs beaten
  • 1 cup bread crumbs preferably Italian seasoned
  • 1/2 cup grated Romano cheese plus extra for serving
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
Sauce
  • 1 cup heavy cream
  • 1/2 cup grated Romano cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon dried parsley
For Cooking
  • 4 tablespoons olive oil for frying

Method
 

Prepare Chicken
  1. Preheat the oven to 350°F (175°C). Pound the chicken breasts to an even thickness.
  2. Season the chicken with salt and pepper.
Bread the Chicken
  1. Set up a breading station: Place flour in one bowl, beaten eggs in another, and a mixture of bread crumbs and Romano cheese in a third bowl.
  2. Dredge each chicken breast in flour, dip in eggs, and coat with the bread crumb mixture.
Cook Chicken
  1. In a large skillet, heat olive oil over medium heat. Add the breaded chicken and cook for about 5-7 minutes on each side, until golden brown and cooked through.
  2. Transfer the cooked chicken to a baking dish.
Make the Sauce
  1. In the same skillet, add heavy cream, garlic powder, and dried parsley. Stir and bring to a simmer.
  2. Add the Romano cheese and stir until melted and smooth.
Combine and Serve
  1. Pour the sauce over the chicken in the baking dish.
  2. Bake in the preheated oven for 10-15 minutes until bubbly. Serve hot with extra Romano cheese on top.
