Ingredients
  

Chicken
  • 4 pieces boneless, skinless chicken breasts pounded to an even thickness
Coating
  • 1 cup Romano cheese grated
  • 1 cup bread crumbs preferably Italian seasoned
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
Egg Wash
  • 2 large eggs
  • 2 tablespoons milk
For Baking
  • 2 tablespoons olive oil for drizzling

Method
 

Prepare Chicken
  1. Preheat the oven to 400°F (200°C). Pound the chicken breasts to an even thickness.
  2. In a mixing bowl, combine the Romano cheese, bread crumbs, oregano, basil, garlic powder, salt, and black pepper.
Prepare Egg Wash
  1. In another bowl, whisk together the eggs and milk until well combined.
Coat Chicken
  1. Dip each chicken breast into the egg wash, then coat with the cheese and breadcrumb mixture, pressing to adhere.
Bake Chicken
  1. Place the coated chicken breasts on a baking sheet lined with parchment paper. Drizzle with olive oil.
  2. Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and the coating is golden brown.
Serve
  1. Remove from the oven and let rest for a few minutes before serving. Enjoy your Chicken Romano!
