Ingredients
  

  • 1.5 lbs boneless, skinless chicken breasts
  • 2 cloves fresh garlic, minced
  • 4 oz canned green chiles
  • 2 cups shredded cheese (cheddar and Monterey Jack mix)
  • 1 cup fine cornmeal
  • 2 cups low-sodium chicken broth
  • 2 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt to taste
  • Pepper to taste

Method
 

  1. Preheat your oven to 350°F (175°C). In a large skillet, heat olive oil over medium heat and sauté minced garlic until fragrant.
  2. Add chicken breasts and cook for about 6-7 minutes per side until fully cooked. Remove from heat and shred the chicken using two forks.
  3. In a bowl, mix shredded chicken with green chiles, cumin, chili powder, salt, and pepper until well combined.
  4. In another bowl, whisk together cornmeal and chicken broth until smooth; let it sit for 5 minutes to thicken slightly.
  5. Grease a baking dish and pour half of the cornmeal mixture as the base layer. Spread the chicken mixture evenly on top followed by half of the cheese. Pour the remaining cornmeal batter over everything and top with the remaining cheese.
  6. Bake uncovered for 30-35 minutes until golden brown on top. Allow to cool slightly before serving.
