  • 3-4 pieces boneless, skinless chicken breasts
  • 4 cloves fresh garlic minced
  • 1 large sweet onion chopped
  • 2-3 pieces chipotle peppers in adobo sauce, chopped
  • 1 can (14 oz) fire-roasted tomatoes
  • 2 tsp ground cumin
  • 1 tbsp olive oil
  • 1 each lime juice
  • salt to taste
  • pepper to taste

Method
 

Cooking Steps
  1. Cook the chicken by boiling it in salted water until tender, about 20 minutes. Shred and set aside.
  2. In a skillet, heat olive oil over medium heat. Sauté the onions until translucent, about 5 minutes.
  3. Add minced garlic and chipotle peppers; cook for an additional minute.
  4. Stir in canned tomatoes and cumin; simmer for about 8-10 minutes until the sauce thickens.
  5. Mix shredded chicken back into the skillet with lime juice, salt, and pepper; simmer for another 5 minutes.
  6. Serve hot on tortillas or rice; garnish with fresh cilantro if desired.
