Prepare the Filling
- Preheat the oven to 400°F (200°C).
- In a mixing bowl, combine chickpeas, cauliflower florets, olive oil, chili powder, cumin, and salt. Toss until well coated.
- Spread the mixture evenly on a baking sheet and roast for 25 minutes, or until the cauliflower is tender and slightly browned.
Assemble the Wraps
- Once the chickpea and cauliflower filling is done, remove from the oven and let cool slightly.
- In each tortilla, layer fresh spinach, a generous scoop of the chickpea and cauliflower mixture, sliced avocado, and sprinkle with lime juice and cilantro.
- Wrap tightly and serve immediately, or wrap in foil for a portable meal.
