Ingredients
  

Chickpea and Cauliflower Filling
  • 1 can chickpeas drained and rinsed
  • 1 head cauliflower cut into florets
  • 2 tablespoons olive oil for roasting
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1 lime juice freshly squeezed
  • 1 teaspoon lime zest for extra flavor
Wrap Assembly
  • 4 large whole wheat tortillas
  • 1 cup fresh spinach or mixed greens
  • 1 avocado sliced for topping
  • 1/4 cup cilantro chopped, for garnish

Method
 

Prepare the Filling
  1. Preheat the oven to 400°F (200°C).
  2. In a mixing bowl, combine chickpeas, cauliflower florets, olive oil, chili powder, cumin, and salt. Toss until well coated.
  3. Spread the mixture evenly on a baking sheet and roast for 25 minutes, or until the cauliflower is tender and slightly browned.
Assemble the Wraps
  1. Once the chickpea and cauliflower filling is done, remove from the oven and let cool slightly.
  2. In each tortilla, layer fresh spinach, a generous scoop of the chickpea and cauliflower mixture, sliced avocado, and sprinkle with lime juice and cilantro.
  3. Wrap tightly and serve immediately, or wrap in foil for a portable meal.
