  • 4 medium bell peppers any color

  • 1 lb lean ground turkey
Canned Goods
  • 1 can (15 oz) chili beans
  • 1 can (14.5 oz) diced tomatoes
Aromatics
  • 1 medium onion chopped
  • 2 cloves garlic minced
Dairy
  • 1 cup shredded cheddar cheese
Oils & Spices
  • 2 tsp olive oil
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tsp chili powder
  • Salt to taste
  • Pepper to taste

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Slice the tops off the bell peppers and remove seeds.
  3. In a skillet over medium heat, heat olive oil and sauté onions and garlic until translucent (3-5 minutes).
  4. Add ground turkey and spices, cooking until browned (7-10 minutes).
  5. Stir in chili beans and diced tomatoes; simmer for 5 minutes.
  6. Stuff each pepper with the mixture and place upright in a baking dish.
  7. Top with shredded cheese, cover with foil, and bake for 25 minutes. Remove foil and bake for an additional 10 minutes until cheese is bubbly.
