Ingredients
  

Marinade
  • 1 cup fresh parsley, chopped
  • 4 cloves garlic, minced
  • 1/4 cup red wine vinegar
  • 1/2 cup extra virgin olive oil
  • 1 tsp red pepper flakes
  • to taste salt
  • to taste pepper
Chicken
  • 4 breasts boneless, skinless chicken (about 1.5 lbs)

Method
 

Preparation
  1. Prepare the marinade by combining parsley, garlic, red wine vinegar, olive oil, and red pepper flakes in a bowl.
  2. Place chicken breasts in a resealable bag or bowl and pour half of the marinade over them. Marinate for at least 30 minutes.
  3. Preheat the grill to medium heat (350°F) or the oven to 400°F (200°C).
Cooking
  1. Remove chicken from marinade and shake off excess. Grill for about 6-7 minutes per side or bake for 25-30 minutes until cooked through.
  2. Brush reserved marinade over the chicken while cooking for added flavor.
  3. Let the chicken rest for five minutes before slicing and drizzling remaining chimichurri on top.
