Preparation
- Prepare the marinade by combining parsley, garlic, red wine vinegar, olive oil, and red pepper flakes in a bowl.
- Place chicken breasts in a resealable bag or bowl and pour half of the marinade over them. Marinate for at least 30 minutes.
- Preheat the grill to medium heat (350°F) or the oven to 400°F (200°C).
Cooking
- Remove chicken from marinade and shake off excess. Grill for about 6-7 minutes per side or bake for 25-30 minutes until cooked through.
- Brush reserved marinade over the chicken while cooking for added flavor.
- Let the chicken rest for five minutes before slicing and drizzling remaining chimichurri on top.
