Ingredients
  

  • 4 breasts boneless, skinless chicken (about 1.5 pounds)
  • 1 cup bell peppers , diced
  • 1 cup cucumbers , diced
  • 1 cup cherry tomatoes , halved
  • ½ cup red onion , thinly sliced
  • ½ cup fresh parsley or cilantro , chopped
  • 3 tablespoons olive oil
  • 1 lemon juice
  • salt to taste
  • pepper to taste

Method
 

  1. Heat olive oil in a skillet over medium heat. Cook the seasoned chicken breasts for about 6-7 minutes on each side until golden brown and cooked through.
  2. Let the chicken cool slightly before chopping it into bite-sized pieces.
  3. While the chicken cools, prepare your vegetables by dicing the bell peppers and cucumbers, halving the cherry tomatoes, and slicing the red onion.
  4. In a large bowl, combine the chopped chicken with all vegetables and herbs.
  5. Squeeze fresh lemon juice over the mixture and drizzle with olive oil. Toss gently to coat.
  6. Season with salt and pepper to taste before serving.
