Ingredients
  

  • 1 head romaine lettuce 4-5 cups, chopped
  • 1 cup sliced cherry tomatoes Fresh and sweet for added flavor
  • 1/2 cup chopped cucumber For a refreshing crunch
  • 1/2 cup shredded carrots Adds color and sweetness; can use chopped or matchstick carrots
  • 1/3 cup diced or sliced red onion Provides a sharp contrast in flavor
  • 1 cup croutons Gluten-free for extra texture
  • 1/4 cup apple vinegar Brings tanginess to the mix
  • 1/2 cup extra virgin olive oil A healthy fat component for the dressing
  • 1 tablespoon Dijon mustard For depth of flavor in the vinaigrette
  • 1 tablespoon maple syrup A hint of sweetness to balance the tanginess
  • 1 teaspoon dried oregano To add a fragrant herb note
  • 1 teaspoon garlic powder For an aromatic kick in the dressing
  • 1/4 teaspoon kosher salt Enhances all flavors in the salad

Method
 

  1. Combine all of the vinaigrette ingredients in a mason jar fitted with a lid and shake well to emulsify. You can also add all of the ingredients to a bowl and whisk them together until fully combined.
  2. In a large bowl, assemble all of the chopped veggies including romaine, tomatoes, cucumber, carrots, onion, and top with croutons for added crunch.
  3. Pour the prepared dressing over the salad mixture, ensuring everything is evenly coated before tossing gently to combine all ingredients together.
  4. Top with grated parmesan cheese if desired before serving immediately as a delightful side or main dish.
