Ingredients
  

Crust
  • 1.5 cups graham cracker crumbs
  • 0.5 cups unsalted butter, melted
Filling
  • 4 packages full-fat cream cheese, softened 8 oz each
  • 1 cups granulated sugar
  • 1 cups full-fat sour cream
  • 2 tsp pure vanilla extract
  • 4 large eggs room temperature
  • 2 tbsp all-purpose flour

Method
 

Preparation
  1. Preheat the oven to 325°F (163°C).
  2. In a bowl, mix graham cracker crumbs and melted butter until combined. Press firmly into a greased springform pan to form the crust.
  3. Bake the crust for about 10 minutes until lightly golden. Set aside to cool.
Filling
  1. In a mixing bowl, blend softened cream cheese and granulated sugar until smooth.
  2. Add sour cream and vanilla extract; mix gently.
  3. Incorporate eggs one at a time, mixing just until blended; avoid overmixing.
  4. Pour filling over the cooled crust and bake for 55-65 minutes until edges are set but center is slightly jiggly.
  5. Turn off the oven, crack the door open, and let it cool gradually to prevent cracks.
  6. Chill in the refrigerator for at least 4 hours before serving.
